An excellent Slow cooker dish. The tomatoes give with dish a lovely reddish colour and the slow cooking makes the chicken so tender and full of flavour.

PREPARATION & COOKING TIME: 6-8 hours
INGREDIENTS:
3 lbs ( 1.4 kg) chicken pieces, skin removed
1 large onion, chopped
14 oz (398ml) canned tomatoes, undrained
5 1/2 oz (156ml) tomato paste
10 oz (284mlO canned mushrooms, drained
1 bay leaf
1 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1 tsp dried oregano
1/2 tsp dried basil
1 tsp sugar
1/4 cup white wine
1/2 cup black olives
METHOD:
Lightly fry and brown chicken pieces. Place in slow cooker with onion.
Combine all other ingredients in bowl. Stir and pour over chicken. Cover.
Cook on Low heat setting for 6-8 hours or on High for 3-4 hours.
Discard bay leaf. Add olives and heat through before serving.
Serve with rice or pasta.
